Summer is here with our gardens growing like weeds. Maybe too many weeds but who’s counting. Everywhere you look there are gorgeous watermelons to enjoy. Pick the perfect watermelon and create this refreshing drink.
With all the rain, my Basil is thriving. Remember to harvest your Basil leave from various locations on the plant. Pinching Basil aides in greater production, but also creates a fuller beautiful plant. Remove the flowers of the Basil plant as these can be used just like the leaves.
Basil and watermelon are a winning combination. This is one of the easiest drinks to make and so enjoyable. Watermelon is a delicious fruit that is also good for you. It contains only 46 calories per cup, and is high in vitamin C and vitamin A. This recipe contains no added sugar, so enjoy this great summer beverage.
Basil Watermelon Aqua Fresca
6 cups cubed seedless watermelon
1 1/2 cups water
Juice of 1 lime
1/2 packed fresh Basil leaves (save a few for garnish)
Add watermelon, water and lime juice to a blender. Process until smooth. Add the Basil and blend quickly. Strain the mixture into a bowl though a fine mesh sieve using a wooden spoon to help push through. Pour mixture into a pitcher. Refrigerate for a couple hours. Stir well before serving. Pour over ice and garnish.
