Herb Detox Soup

The stress of the New Year is always a challenge while this winter has been awful with record numbers suffering from the flu. Make a natural healthy easy to make pot of goodness.

Choose your favorite immune boosting herbs and vegetables. Allow the ingredients to simmer in a soup pot or slow cooker and you’ll be rewarded with a comforting soup.

Many times I use vegetables that I have in the freezer from my garden harvest. My favorite herbs are ginger, turmeric, garlic, thyme and parsley. I prefer fresh herbs, but use can substitute dried if necessary.

Add or adjust the recipe to create your wholesome and healthy soup. Sip and relax with this cure all.

Herb Detox Soup

Ingredients
8 cups water
2 medium leeks, sliced
2 carrots, chopped
8 oz. mushrooms, sliced
2 tomatoes, chopped
Juice of 1 lemon
4 garlic cloves
3 slices of fresh ginger
4 slices of fresh turmeric
A few sprigs of thyme
Small handful of chives
A few sprigs of parsley
1 bay leaf
 

Directions

Combine all ingredients in a large pot. Bring to a simmer over medium high heat. Reduce heat to low and simmer uncovered for 2 hours. Strain broth through a fine sieve, pressing down on the solids.
