Lemon & Mint Spaghetti
This is a great dish that is easy to make and can be served at room temperature. It works well for a picnic side dish. Mint is growing rampant this time of year and is delicious with the lemon. Make sure to cut your green onions with scissors to retain their juices. If you slice green onions with a knife, they squish.

Ingredients
1 lb. package of dry spaghetti. Whole wheat pasta works well
1/2 cup olive oil
3/4 cup grated parmesan cheese
Zest of 1 lemon
Juice of 2 lemons
1/4 cup fresh Mint, chopped
3 green onions, sliced with scissors
Pinch of salt & Pepper
Pinch of crushed red pepper if you like a touch of heat
Directions
Cook the spaghetti al dente in salted water. Save 1/2 cup pasta water. Drain the spaghetti. In a large bowl whisk together the remaining ingredients including the pasta water. Toss dressing with the cooked spaghetti.
Serves 4-6
