Tomatoes are abundant in our gardens; large, small and heirlooms are at their best. In fact, the Garden just hosted the Annual Tomato Contest this month!

This recipe works with any ripe tomato. Fresh herbs are vigorously growing and want to be in your recipes!

No need to heat up the kitchen, Summer No Cook Pasta Sauce is healthy and so delicious. This sauce is a favorite in my kitchen for its simplicity of blending fresh ingredients. The freshness of  tomatoes and herbs bring the garden to your kitchen making this a favorite go to recipe.

Ingredients
3 large ripe tomatoes or 2 1/2 cups chopped tomatoes
1/4 cup olive oil
1 Tbsp. balsamic vinegar
2 cloves garlic, minced
Handful fresh Basil, sliced into thin strips (Use scissors)
Pinch of dried Oregano or 8 fresh leaves, sliced
2 sliced chives or green onions
1/2 tsp. crushed red pepper
Pinch of salt & pepper
1 lb. your favorite pasta
1 cup Feta Cheese Crumbs or Parmesan cheese

Directions
Slice tomatoes in half and remove the seeds.
Chop the tomatoes and place in a large bowl.
Add the olive oil, balsamic vinegar, garlic, Basil, Oregano, red pepper, chives, salt and pepper to the bowl.
Stir to blend flavors.
Set aside at room temperature for an hour.
Cook the pasta and drain.
Add the warm pasta to the sauce bowl.
Add cheese and toss with tongs to mix.
Serves 4 – 6
